We are excited to share our first video in our Great Choices for Great Kids Video Series. These videos highlight our Harvest of the Month as a part of our Healthy Eating/Healthy Initative. January's Harvest of the Month is Winter Greens. We grew ours in the greenhouse at GKF, but you can find greens at your local market. My name is Suz and I am the Program Assistant at Great Kids Farm and I'll show you in the video below how to make GKF's special Ranch Salad Dressing. It's great on Winter Greens and lots of other veggies! I made a kale and spinach salad (fresh from the farm) with this tasty dressing for my lunch. Each month we will feature a new vegetable that is in season at the farm and a recipe, project or tip to accompany it. Try it out and share with your friends and family! As promised, here is the recipe:
Great Kids Farm Ranch Dressing
1 cup (8oz) sour cream or plain Greek style yogurt*
1 cup buttermilk*
1 tsp garlic powder
1 tsp onion powder
1 Tbsp chopped fresh parsley
1 Tbsp chopped fresh dill
1 Tbsp chopped fresh chives
½ tsp salt
A sprinkle of fresh cracked pepper
(*buy fat-free dairy products for full flavor with none of the fat)
Combine all ingredients in large bowl. Stir well with whisk to combine. Serve with celery sticks, sliced carrots, cucumbers, or another of your favorite vegetables. Refrigerate leftover dressing to enjoy all week.
The kale and spinach salad with GKF Ranch Dressing turned out really well! I enjoyed my lunch, if you can't tell by this picture!
Some more info about the Healthy Eating/Healthy Living initiative:
The HEHL (Healthy Eating/Healthy Living) program supports schools and their communities in strengthening their commitment to living a healthy lifestyle. This initiative encompasses educational support and activities targeted at students, teachers, and families to build knowledge and confidence through practice in the areas of healthy eating and school and community gardens. Throughout the school year, Great Kids Farm provides monthly opportunities for students, teachers, and families to engage in activities or events to enhance their current skills or learn new ones both at the farm and on their social media channels by sharing tips and recipes. The Good Food Summit, the Garden Summit and the Pollinator Summit are advanced training workshops held at the farm and attended by City Schools students. The hope is that participants at these workshops will then serve as ambassadors for the farm and healthy choices at their respective schools. GKF supports school gardens across the district through seedling and material giveaways, professional development opportunities for instructors and classroom vegetable boxes with lessons and produce grown at Great Kids Farm. Participation in the HEHL program is open to any City Schools’ student, teacher, or family.
See you next month with our first special guest who is going to talk to us about how to grow microgreens in your house!
